When Yè Shanghai opened in Hong Kong in 1998, it was clear that Elite Concepts had created something out of the ordinary. Now, with the confidence born of success, Yè Shanghai, Shanghai now brings its unique cuisine and atmosphere to the Mother City – Shanghai.
No ordinary location would do for this latest incarnation of Yè Shanghai, so the city’s history played a large part in choosing a location. The restaurant is at 338 Huang Pi Nan Lu, in Xintiandi, a new Shui On development in the former historic French Concession. Guests at Yè Shanghai have the experience of dining in a genuine “Shikumen” (stone gate) house, which has been carefully restored to its original magnificence.
Since Yè Shanghai reflects the glory of the city in its heyday, we wanted a location that did the same,” says Paul Hsu, Executive Director of Elite Concepts. “We were fortunate to find this glorious building. The setting goes hand-in-hand with the dining experience.” Hsu developed the Yè Shanghai concept in collaboration with internationally renowned architect and designer Tony Chi.
The location, however, is only half the story - Yè Shanghai’s cuisine is just as impressive as its setting.
Six hand-picked chefs including Master Chef Zhang, Zou Quan were sent to observe operations at Yè Shanghai Hong Kong in December 2001. They are now posted at their stoves, knives sharpened and ready to dazzle the taste buds of Shanghai’s food lovers with their contemporary interpretations of the classic dishes from Jiangsu, Zhejiang and Shanghai.
Those who have visited Yè Shanghai in Hong Kong will have sampled some of the renowned Shanghainese cold dishes that make such excellent starters: Yè Shanghai’s own Drunken Shrimps, Smoked Pomfret or Bean Jelly with Cucumber, just to name three.
There are also tangy sun-dried seafood dishes, succulent meat and poultry offerings and superb crispy rice and noodle creations. Chef Zhang is also featuring a Live Seafood selection on the menu. Guests can order their fish or seafood live and have it cooked in a variety of ways – steamed, braised or sautéed with garlic.
Yè Shanghai has come “home,” but is its travels
over ? Hardly, “Yè Shanghai is a proven restaurant concept,” says Paul Hsu. Now that we’ve established our ‘Mother Ship’ in Shanghai, we’re ready to take it global.” Soon international food lovers might be seeing the Yè Shanghai name in Tokyo, San Francisco, London, New York, or Paris.
