Chef DeAille Tam has been selected by Finnair to bring modern and fresh Chinese flavors
to its
business class customers on all long-haul flights from Greater
China to Helsinki, starting 5 December 2019.
Born in Hong
Kong, Chef Tam's work has taken her to top
restaurants on three continents. She was the first female chef to
receive a Michelin star in 2018 in China, and she has created
culinary experiences for several international brands.
The tasty
dishes created by Chef Tam form a modern Chinese-inspired menu
where East meets West in a delicious, fresh form.
“One of
my passions is to bring Chinese cuisine to a broader audience,”
said Chef Tam. “My mission is to give people an experience
when they eat, a memory to keep. I think the aircraft is a perfect
place for this.”
The first menu
includes a starter and a main dish:
Starter:
Drunken Prawns Tomato Gelée, Peas, Taro Crisp, Garlic
Crema
Main Course:
Ribeye Steak Black
Pepper Jam, Caramelized Honey, Pickled Chinese Pepper, Sweet
Potato, Watercress Nage

adventure,” said Maarit Keränen, Head of Inflight Food & Beverage
Concepts at Finnair. “Our Signature Chef program honors the
cuisines of our key markets, and we are proud to have Chef Tam’s
menu as a part of our Finnair experience.”
Finnair began its Signature Chef program in 2013
and has since worked with a series of acclaimed chefs from
Finland, Japan, China, Korea, and the United States.
Finnair currently operates to seven major
airports in Greater China: Beijing Capital, Beijing Daxing,
Shanghai, Nanjing, Guangzhou, Xián and Hong Kong.
