Behind an inconspicuous doorway in The Chinnery
at the Mandarin Oriental, Hong Kong, The Krug Room boasts an
exclusive culinary experience as the only restaurant in the world
that pairs a prestigious menu with various Krug champagnes.
Despite having only a maximum capacity of 12
seats, its exclusivity has never withheld culinary maestro Chef
Uwe Opocensky from surprising diners with his unimagined levels of
inventiveness and artistry in the dining area since it opened in
2006.
In April, a collaboration between two
Michelin-starred chefs, Executive Chef Uwe Opocensky and Chef
Hiroyuki Kanda of the eponymous restaurant, Kanda in Tokyo, will
see the pair offer guests a 12-course menu that is available for
just four days, from 9 to 12 April
2014.
Similar to The Krug Room in philosophy and
esteem, Kanda is regarded as one of Tokyo’s leading kakureiga
restaurants that are usually small and hard to find, with menus
that are dictated by the chef according to the season’s freshest
ingredients.
In the “Krug meets Kanda” 12-course promotion,
the menu displays a unique crossover of Uwe’s progressive
gastronomy and Kanda’s traditional Japanese culinary concepts
through playful elements as yuzu and tonkatsu, as well as Uwe’s
always inventive dishes such as “Spring Garden” that evoke not
only an image and taste, but also emotion.
An ultimate Krug
expression greets diners with their first dish with the
mouth-watering “Grande Cuvée Washed Spiny Lobster with Krug
Mayonnaise and Caviar” that is immediately juxtaposed with the
second dish, whereby Kanda infuses the traditional Japanese
rice-wine, sake, with goose liver in “Foie Gras Cured with Sake
Lees and Yuzu Flavour”.
Similar parallels between East and West
cuisines are showcased throughout the entire experience, but it
concludes symbolically in the “Slow Cooked Miyazaki Beef Cutlet
with Water Cress and Seaweeds” by marrying the different cultures
together in one dish.

per person, guests can sample the “Krug meets Kanda” package that
comprises two glasses of Krug Grande Cuvée, a glass of Krug
Vintage 2000 and a glass of the House of Krug’s recently launched
Krug Vintage 2003.
For HK$6,888 + 10% per person Krug lovers can savour “The Magic 3”, a
themed package that includes various rare Krug vintages including
a glass of Krug Grande Cuvée, and a glass of the Krug Clos du
Mesnil 1983, Krug Collection 1973 Magnum and the Krug Vintage
2003. This package is only for parties of 10 or more guests.
