Martin Chung has been appointed as General
Manager of The Mira Hong Kong.
Prior to joining The Mira, he was Senior
Vice-President – Food and Beverage – of Atlantis, The Palm Dubai.
On the senior management team of Kernzer International Resorts
Inc. in the UAE, Chung oversaw the operation of 35 food and
beverage outlets at The Palm Dubai, establishing standards for
award-winning restaurants including Nobu, Rostang, Ronda Locatelli
and Ossiano. During his tenure with Kerzner, Chung also oversaw
pre and post openings and operations at One & Only Resorts in Cape
Town, Morocco, the Maldives, and Mauritius, among other worldwide
locations.
Formerly Hotel Manager at the Jumeirah Emirates
Towers Hotel in Dubai; with additional tenures as Executive
Assistant Manager of Rosewood Hotels and Resorts and Deputy
General Manager (F&B) of the Carlton Hotel in Switzerland, Chung
has enjoyed a diversified career spanning Asia and Europe. His
Hong Kong and China expertise spans roles as Director of Food and
Beverage at Conrad Hotel Hong Kong, the Shangri-La Shenzhen, as
well as the Garden Hotel in Guangzhou.
Educated in Switzerland, Chung holds a degree in
Hospitality Management from the University of Lausanne and a
bachelor’s degree in Business Administration from La Neuveville,
Switzerland. A creative and entrepreneurial leader, as well as a
polyglot, native in five languages including English, German,
Italian, French and Spanish, Chung is adept at working with a
multitude of backgrounds and cultures. His linguistic proficiency
gives him a natural flair as a cross-cultural communicator, who is
skilled at pulling together multi- national teams to ensure finite
business results.
On his new remit at The Mira Hong Kong, Chung
cited striving for new ideas, innovation and achieving consistent
levels of service as keys to the hotel’s continued succes, “We are
looking to find new ways to make the guest’s stay more memorable
and to see things from the guests’ perspective. We will try to
establish standards that we can consistently deliver, which are
customer-friendly, but flexible enough to think ‘at the edge of
the box,’ rather than outside it. To encourage and foster a Mira
Culture will play a big role in achieving this, with the support
of our world-class team.”
